What makes our coffee so good?
Our coffee is locally fresh roasted, using sustainably harvested California oak wood. We feel that when compared to the use of gas as a fuel, this historic roasting method gives the coffee an important flavor component while leaving a lower carbon footprint.
We have worked hard to come up with a coffee blend with a big, rich flavor, while being as low as possible in acidity. We do this to minimize bitter flavors.
Coffee beans are a lot like wine grapes in that they vary quite a bit from one farm to the next. One advantage in blending small batches is that we can choose our beans by farm, not just by country of origin. For example, in blind tastings we often choose farms that are located at unusually high altitudes, because their beans tend to have softer flavors.
Since each farm's beans taste different, ideally, they should each be roasted a different amount, to bring out their peak flavor. So we take the unusual extra step of roasting each component of our blend individually before blending them together.
When you open a bag of our coffee look for the rich and varying colors, smell the bold notes, then smell the subtle notes, make yourself a cup and enjoy!
